22' Hire More Felons Cider

An orchard cider with a winemaker’s instinct.

Made from Jonathan apples grown in Sonoma County, the fruit was picked and processed in collaboration with Aaron of Bardos Cider, then transferred to barrel and stainless for fermentation on Corvina grape skins, adding texture and depth. After approximately 12 days on skins, the cider was drawn down and aged in barrel for 14 months.

Fermented without added SO₂ and finished with a pilsner yeast sourced from Woods Brewing, lending a soft, natural effervescence and lift.

The result is a layered, fruit-driven cider with savory complexity and freshness. A touch of volatile character adds intrigue, balanced by structure and clarity. Exceptionally drinkable when well chilled.
